Healthy Rice Krispie Treats
Since I got into baking in college, I've always loved trying to make substitutes for desserts I enjoyed as a kid, but without the ingredients that harm our gut. Queue these healthy rice krispie bars. They use Whole Foods' puffed brown rice crisps, and are naturally sweetened with honey and coconut oil. All garnishes are optional, but the explosion of flavor with each pomegranate seed is my favorite part.
I'm a big fan of meal prepped dessert, since I know without fail that I will crave one after every meal. I like to be prepared so that I don't reach for a more-processed dessert in a moment of desperation. These rice crisps are one of my favorite desserts to have on hand. Whether I am eating one with my coffee in the morning, or wine at night, it satisfies my craving and I feel good after eating them!
Ingredients
-1 tsp coconut oil
-1/2 cup honey
-2 tbsp nut butter (I used peanut butter)
-3 tsp vanilla
-3 cups plain puffed brown rice cereal
-3 cups chocolate puffed brown rice cereal
-1/2 cup pumpkin seeds
-1 bar melted chocolate (melt with another 1 tsp coconut oil)
-Pomegranate seeds to garnish
Directions
1. Melt coconut oil over the stovetop on medium heat in a large pot.
2. Add in your honey and nut butter. Turn off heat and add vanilla.
3. Add in cereal and pumpkin seeds; mix altogether.
4. Pour mixture into a 9x13" un-oiled pan, place in the freezer to set. You can also place in the fridge, but it will be a softer consistency and may fall apart.
5.Once rice crisps are set, melt your chocolate and pour on top spreading it out with a knife.
6. Garnish the pomegranate seeds in the still-melty chocolate.
7. Store in either the fridge or freezer, depending on what consistency you like. Enjoy!
