Frozen Blueberry Clusters

If you're like me, you need a sweet treat after every meal. I cannot deny my sweet tooth, so I like to have easy, healthy snacks on hand. These frozen blueberry clusters couldn't be easier to make, and store in my freezer. The peanut butter and chocolate combo (I used a Lily's Salted Chocolate bar melted with coconut oil) is so good!

 

Wild blueberries are also a superfood.

Compared to normal blueberries, wild blueberries have:

- 72% more fiber

-30% less sugar

-33% more anthocyanins

-8x more manganese (reduces inflammation and regulated blood sugar)

-2x more antioxitants

-Smaller in size, so contains less water and more antioxidant rich pigments (fiber) and more intense blueberry flavor

-15 to 20 less calories per cup

So not only are you satisfying a craving, but you're also giving your body tons of amazing nutrients. Meal prep these to have on deck for your week!

Ingredients

-1.5 cups wild blueberries

-1/2 cup peanut butter 

-3/4 chocolate bar, chopped up

-1 tsp coconut oil

-Flakey sea salt to garnish

Directions

1. Put blueberries into a medium-sized bowl, and add your nut butter of choice. Mix together until combined.

2. Take chopped-up chocolate bar or chocolate chips, and melt with coconut oil in microwave for 30 seconds at a time.

3. Pour melted chocolate on the blueberry/peanut butter combo. Mix until evenly coated.

4. Take spoonfuls of mixture and place on a baking sheet lined with parchment paper. 

5. Top with extra chocolate and sea salt.

6. Freeze until clumps have hardened together. Enjoy!
