Peppermint Mocha
Energy Balls

Energy balls are my favorite quick snack to have on hand at all times. They are packed with protein and sustainable carbs that will actually satisfy a hunger and/or sweets craving (if you make with chocolate). These have peppermint extract in them for some holiday flare, but that can easily be removed and replaced with vanilla extract! Then you're left with chocolate energy balls. I like to meal prep these on a Sunday and keep them in the fridge for the week. Whether I need a quick breakfast before my coffee, chocolate bite after a meal, or just a snack in general- these are my go-to.

Ingredients

-1/2 cup nut butter of choice (I used peanut butter)

-1/4 cup honey

-2 tbsp cocoa powder

-1/4 teaspoon peppermint extract (or substitute vanilla)

-pinch of salt

-1 cup GF rolled oats

1/3 cup chocolate chops

Directions

1, Mix your nut butter and honey together into a large bowl.

2. Add the remaining ingredients, stir in chocolate chips.

3. Roll into balls and store in your fridge for up to a week. Enjoy!
