I'm sure you can tell, but I am a huge fan of meal prepping. Especially when it comes to breakfast, I don't want to have to think too hard about what I'm going to make in the morning. That is why I love overnight oats so much. I like experimenting with different flavors too, which prevents me from getting bored of the typical overnight oats recipe. This one is a new favorite with the raspberry and chocolate combination. My favorite part is smashing the hardened salted chocolate shell in the morning. You can also sneak in some protein with these oats every morning by adding in your protein powder to the mixture. They are quick and easy to make, and then they keep me full all morning long. I could truly eat this every day!
Ingredients (per glass):
-1/4 cup GF rolled oats
-1 tbsp flax seed
-1 scoop protein powder (optional)
-1/2 cup coconut milk
-1/4 cup raspberries
-2 tbsp coconut yogurt
-1/4 cup chocolate chips
-1 tbsp coconut oil
-flaky sea salt to garnish
Directions:
Combine the oats, flax seed, protein powder, and milk into a glass.
Take most of the raspberries (save about 5) and heat them on the stovetop until a jelly substance forms. If you have a nonstick pan, this should take a minute or two. If you don't, you may need to add some coconut oil here to keep the raspberries from sticking to your pan.
Pour the raspberry jam mixture you just made into your oats mixture.
Layer your coconut yogurt on top of the raspberries.
Melt the chocolate chips and coconut oil in the microwave with intervals of 30 seconds, stirring in between.
Top your yogurt with the chocolate, and add flaky sea salt if desired.
Place in refridgerator and let sit overnight. Enjoy in the morning for breakfast!
