Once again, we are meal prepping over here. We have an addiction to Starbucks egg bites, so I made it my mission to make my own that tasted just as good- if not better. These are protein packed bites that can be used as a snack throughout the day, or have a couple for breakfast in the morning. Billy loves taking them to work, especially when he is running out the door. You can really fill the muffin tin with anything you have on hand here- I used some frozen kale, peppers, and onions, chicken sausage, and goat cheese. It can be whatever ingredients you have on hand- think frozen veggies, bacon, ham, leafy greens, and a cheese. They are freezer friendly and will last in your refrigerator for up to 5 days!
Ingredients (for 8 egg bites):
- 9 eggs
-2 tsp salt
-1 tsp pepper
-1/4 cup kale
-1/4 cup peppers
-1/4 cup onions
-2 chicken sausage links
-goat cheese to garnish
Directions:
Preheat your oven to 350 degrees and either line a muffin pan or spray it with oil to prevent the egg mixture from sticking to it.
Whisk the eggs, salt, and pepper in a bowl.
Add the kale, peppers, onions, and sausage links to the bottom of your muffin tins.
Pour the egg mixture on top of the other ingredients.
Top with a sprinkle of goat cheese on each.
Place in the oven for 20-25 minutes, taking the pan out once the egg mixture is set.
Enjoy! Store in your freezer or keep them in your refrigerator for up to 5 days.
