Edible Cookie Dough (Valentine's Edition)

After years of seeing healthy cookie dough recipes pop up on my feed, I finally made my own version. I knew I needed it to be easy and simple- definitely a one bowl recipe with minimal ingredients. Honestly you probably have all of these ingredients in your pantry right now. The heart shapers, chocolate coating, and pink drizzle are extra of course, but they all got me in the Valentine's Day spirit! Meal prep these this weekend and have a healthy, protein packed sweet treat on hand for the week.


Ingredients (makes about 20 small balls- or hearts)


- 1 1/4 cup gluten free flour

-1/4 cup protein powder

-1/4 cup nut butter of choice (I used Oat Haus granola butter)

-1/4 cup honey or maple syrup

-2 tsp vanilla

-1/4 cup milk + tbsp's as needed

-1 cup chocolate chips

-1 tbsp coconut oil


Optional icing:

-1 cup powdered sugar

-1/4 cup milk


Directions:

  1. Mix the flour, protein powder, nut butter, honey, and vanilla into a bowl. Stir to combine.

  2. Add in your milk of choice (I used coconut milk) starting with 1/4 cup. You will probably need an extra tbsp or two for the desired consistency.

  3. Add in 1/2 cup or more of chocolate chips and combine.

  4. This is where you can either roll the dough into balls, or put them in freezer trays in the shape of a heart. Put them in the freezer overnight, or for at least 4 hours.

  5. Microwave 1/4 cup of chocolate chips and your coconut oil for 30 second increments until melted.

  6. Coat your frozen cookie dough with chocolate, and set on parchment paper to dry.

  7. If you want extra icing, mix powdered sugar and milk. You may need to adjust for a thicker or thinner consistency. We love the Lakanto Monk Fruit powdered sugar. Drizzle on the dried chocolate coated cookie dough.

  8. Let icing dry and store in container in the fridge for up to a week. Enjoy!
