"It's a chicken salad"..had to. I am obsessed with chicken salad, and always have been. My mom used to make it for us all the time, but I haven't really stuck with it as much in my 20's. Especially with the spring season, I am craving less warm foods and more "cold salads" as the temperatures continue rising. This was such an easy meal to prep on Sunday before the week. I enjoyed it on top of my kale salads, on my sourdough bread, and simply with crackers for a snack. I never felt like I was having the exact same meal, which is such a win when you meal prep. It was super easy to transport in tupperware as well for Billy to take to the office. Even after a week of it I am still excited for my lunches, so I will be making this again soon!
Ingredients:
-1 rotisserie chicken, or 2 cups cooked chicken
-1 celery stalk, chopped
-1 bunch of red grapes, diced
-1 green onion, diced
-1/4 cup pepperocinis, diced
-1/2 cup mayonnaise (I used Primal Kitchen)
-2 tsp dijon mustard
-Juice of 1/2 lemon
-1/2 tsp salt
-1 tsp pepper
-1 tsp dill weed (or fresh dill)
Directions:
Simply combine all ingredients into a bowl and mix well.
Enjoy over a sandwich, top of your favorite salad, or scooped with crackers!
