Super Bowl weekend is here, which means Super Bowl food is here! With the Super Bowl always being close to Valentine's Day, this is one of my favorite weeks of food during the year. I am a big dip and chip girl, so I had to make one of my favorites. This is beyond simple, "requires" about three ingredients, and you can mix up the toppings for your preference. Key word being requires- you can really make this creamy mixture with just goat cheese, cream cheese, olive oil, and salt. I like to add honey for some sweetness, but the toppings are up to you! This time I went with a roasted tomato, thyme, balsamic mix. Other favorite's include candied bacon and dates, and olive tapenade. The possibilities are endless. If you are in a crunch and need a last minute dish, this is for you.
Ingredients:
Whipped Goat Cheese:
-1 log goat cheese (8-10 oz), at room temperature
-4 oz cream cheese, at room temperature
-1 tbsp olive oil
-1 tbsp honey
-1 tsp sea salt
-5-7 basil leaves, chopped
Tomato Topping:
-1/2 cup cherry tomatoes
-1 tbsp olive oil
-1 tsp salt
-1/4 cup oil packed sun-dried tomatoes, chopped
Garnish:
-2 tbsp balsamic glaze (a generous drizzle)
-2 tsp fresh thyme
-french baguette/crackers/veggies for dipping
Directions:
Whipped Goat Cheese:
1. Blend the room temperature goat cheese and cream cheese until smooth. I put them in a blender, you can also use a food processor or mixing bowl.
2. Add the olive oil, honey, and salt, blending them into the cheese mixture. Last, add half of the chopped basil and blend once more.
3. Add whipped mixture to a plate or bowl.
4. This will store in your fridge for up to three days, tasting just as good as the first day made- so feel free to make it ahead of time!
Tomato Topping:
Cut the cherry tomatoes in half, adding them to a skillet with your olive oil. Add salt and saute for 5 minutes.
At the end of 5 minutes, add in your sun dried tomato mixture to briefly combine with cherry tomatoes.
Remove from heat. Top on the plated goat cheese mixture, and then add your balsamic glaze.
Serve with fresh bread, and enjoy! GO CHIEFS!
