Winter Harvest Salad

This is my new favorite salad, and judging by Tik Tok it has become one of your favorites too! It it such an easy, meal prep filled meal that it's hard not to make it every week. We have my favorite GF chicken tenders, sweet potatoes (best salad topper imo), hormone healthy carrot salad, pomegranate seeds, and goat cheese. Not to mention topped with a homemade honey dijon vinaigrette. This is literally my ideal salad, and it's perfect for the winter season.

The hormone healthy carrot salad is optional- you can always just add shredded carrots. Carrots are very beneficial for detoxing excess estrogen from the body. A common hormone imbalance in women is estrogen dominance. Signs of estrogen dominance include PMS symptoms, painful menstrual cycles, hormonal acne, headaches, and excess weight around the midsection. Eating this simple salad as a snack every day is a great way to open up those detox pathways. The coconut oil and vinegar help to reduce harmful bacteria to the digestive tract, which normalizes the gut bacteria and rebalances hormones and metabolism. Safe to say, I am a fan! And weirdly, the sweetness from the coconut oil mixed with the tang of vinegar plus the salt makes for a great combo in my opinion. It's also just a really easy side/snack to have on hand or throw in a salad. Eating good foods that heal my gut and hormones is always a win-win for me.

Ingredients

Salad Base

  •  1 bunch of kale

  •  1 tbsp avocado or olive oil

  •  1 tbsp lemon juice

  • 2 tsp salt

  • 1 package chicken tenders 

  • 2 sweet potatoes

  • 1 tbsp avocado oil

  • 2 tsp salt 

  • pepper to taste

  • 1/4 cup goat cheese

  • 1/4 cup pomegranate seeds

Hormone Healthy Carrot Salad

  • 1 cup shredded carrots

  • 1 tsp melted coconut oil

  • 1 tsp apple cider vinegar

  • 1 tsp salt

Honey Dijon Vinaigrette 

  • 1/3  cup olive oil

  • 2 tbsp apple cider vinegar

  • 3 tbsp honey

  • pinch of salt

  • 1 tsp pepper

Directions

Salad Base

1.  Rip kale leaves from the stem and place in a bowl. Drizzle oil, lemon juice, and salt and gently massage into kale leaves. Cover the bowl and place in fridge. The longer the kale breaks down in the oil, lemon juice and salt, the easier it will be to digest.

2. Cook chicken tenders. See my GF Chicken Tender recipe here.

3. Dice up sweet potatoes, cover in avocado oil, salt, and pepper. Once coated cook in air fryer for 20 mins at 380 degrees, tossing occasionally. 

4. Top with pomegranate and goat cheese.

Hormone Healthy Carrot Salad

1. Mix shredded carrots with coconut oil, apple cider vinegar, and salt. Eat as a snack, or top your favorite salad with the mixture.

Honey Dijon Vinaigrette 

1. Mix olive oil, apple cider vinegar, honey, salt, and pepper together. Shake well. Top with your favorite salad and store in your fridge for up to two weeks!
