Green Goddess Buffalo Chicken Salad
I think by now we have all heard of @bakedbymelissa on Tik Tok, right? And if so, you are aware of her viral green goddess dressing. Well, I finally made my version of it and I cannot get enough. It is the perfect salad dressing or dip, and it seems to go with everything. I have also been on a major buffalo kick recently, so pairing the two was bound to happen. This salad has been on repeat over here. If you don't like buffalo, you can make the green goddess base and top it with literally anything! I think my next choice is a crispy salmon. YUM.
Ingredients
Green Goddess Dressing

2 cloves garlic

1 small shallot
-
Juice from 2 lemons

1/4 cup olive oil

1 tsp rice vinegar

A handful of green onions
-
1/2 cup cashews
-
Handful of spinach
-
1/4-1/2 cup nutritional yeast

Pinch of salt (if cashews aren't salted)
Salad
-
4 baby cucumbers, or 1-2 large
-
Head of iceberg lettuce, shredded

1 cup shredded carrots
Chicken
-
2 grilled chicken breasts
-
Primal kitchen buffalo sauce
Directions
Dressing
Blend all ingredients together. Store in an airtight container in the refrigerator for up to a week.

Salad + Chicken
Chop cucumber and iceberg lettuce as finely as possible. Add carrots.
Add in green goddess dressing and combine.
Grill chicken to preference, cut into cubes, and toss with buffalo sauce (or sauce of choice).
