GF Breaded Chicken Tenders
Chicken Tenders. Who didn't grow up on chicken fingers and fries? Unfortunately, my gut does not agree with my 8-year-old self nowadays, and I can't live on the iconic meal. But, that doesn't mean I stopped craving them. I try to stick to a mainly gluten free diet, so I made my own version of chicken fingers that I can enjoy without facing repercussions in my body. I like to meal prep these at the beginning of the week, maybe enjoy them for a dinner and then use the leftovers for my lunch/salad bowls. They totally satisfy my chicken finger craving- plus, add a little sweet potato and you've got the fries down too!
Ingredients
-1 package of chicken tenders
-1 cup gluten-free panko breadcrumbs
-2 tsp salt
-1/2 tsp pepper
-seasonings to taste
Directions
Thaw the chicken overnight in the fridge.
Spray chicken with avocado oil or olive oil.
Prepare a bowl of gluten free panko bread crumbs, salt, and pepper.
Dip chicken in breadcrumb mixture and generously coat the tenders.
Once coated, place in air fryer at 375 degrees for 15 minutes, flipping half way.
Enjoy on their own with dipping sauce, or throw on top of your favorite salad!
