Chopped Italian Salad
Twas' the Monday after my cousin's bachelorette.. and the last soldiers standing (me and my other cousin) desperately needed a vegetable. Enter: the best Italian chopped salad I've ever had. Lucky for us, it was homemade pizza for dinner the night before, so all of the ingredients were at our disposal in the fridge already. Also please note that pro tip for future use; 1) homemade pizza night for dinner 2) followed by a stunning Italian chopped salad for lunch the next day. It's a win-win.
Granted it was one of the best weekends of the year, but this deliciously healthy salad waiting for us that following Monday was the icing on the cake. I love an Italian sub, and this salad is just that, but deconstructed. The salami mixed with mozzarella cheese and vinegar vegetables is impossible to beat. Plus the dressing?! My cousin introduced me to this simple Italian dressing and I haven't looked back. Hint: adds mayo to balsamic vinigarette. Just wait!
Ingredients
Salad

Head of romaine
-
1 cup salami, cut up

1/2 cup soppressata, cut up

1/2 cup shredded mozzarella

1/4 cup provolone

1/4 cup tomatoes

1/2 cup cucumbers

1/2 cup roasted red peppers

1/2 cup artichoke hearts

1/4 cup olives, cut up

1/2 cup red onion

Grated Parmesan to taste

Dressing

1/4 cup red wine vinegar

1/4 cup olive oil
-
1 tsp dried oregano
-
1 tbsp mayonaise

1 clove crushed garlic

Salt and pepper to taste

Directions
Chop up iceburg lettuce as finely as possible, and add to bowl. Follow with all ingredients, chopping them before adding them to the bowl. If you want to add or subtract specific ingredients, do so here.
Mix salad dressing ingredients together. The mayo will bind all the ingredients. Dress the salad and mix together. Enjoy!
