French Onion Orzo Pasta
French Onion pasta had a bit of a ~moment~ on TikTok this past season. I am an absolute sucker for French onion soup, so I knew I had to make my own version. To say it satisfied my craving would be an understatement. I crave this pasta dish more than the soup now, and it's healthy for me! I added in extra veggies for some bonus nutrients. Fun fact, my boyfriend hates mushrooms and 1) had no idea they were in here, 2) found out they were and proceeded to get a second serving. You can really add whatever vegetables/protein you like in this base pasta dish. We also add chicken a lot, and I've been thinking an Italian sausage might be tasty in this too.
Ingredients (serves 2)
-2 large white onions
-1 tbsp olive oil
-2 cloves garlic
-1 large zucchini
-1/2 cup mushrooms, diced
-Salt and pepper to taste
-8 oz GF orzo (I use the brand Jovial)
-2 cups boiled water
-Parmesan to garnish
Directions
1. Finely slice onions into thin strips or rings. Place on stovetop with oil, set on medium-low heat. Keep an eye on the onions for the next 30 mins, moving them around every once in awhile. If they start to burn to the pan, add a little bit of water and move around.
2. When onions start getting browned, add garlic, zucchini, and mushrooms. Add extra oil if needed. Season with salt and pepper.
3. Add a little bit of orzo to your pan. Add the same amount of boiled water. You will slowly add in the orzo as it continues to absorb the water. I add about half the orzo/water and stir for 5 mins. Then add the remaining orzo and water, and cover your pan and let simmer for about 6 mins.
4. Once the water is absorbed, the orzo has softened, and the veggies are cooked to your preference remove from heat.
5. Plate and top with Parmesan. Enjoy!
