Mom's Healthy Chili
When I think of comfort food, chili is top of mind. Especially going home to KC for the holidays, there is always a bowl waiting for me. There's hundreds of different ways to make chili, but my mom's healthy version is one of my favorites. It has all the basics, and it satisfies my cravings without making my gut suffer afterwards. It's also the BEST meal prep. You can eat it for dinner all week, or freeze a batch to pull out on a rainy day or when the mood strikes. You can use all your favorite toppings, and maybe even make some air fried chips out of your favorite tortillas ;) the possibilities are endless. My favorite toppings above are unsweetend, plain coconut yogurt (sour cream), homemade guacamole, cilantro, and Siete tortilla chips. That's another reason I love it so much- with all the modifications and additions, each bowl can be completely different. One of my mom's signatures is air frying some homemade french fries - thus, chili cheese fries. My mouth is watering just thinking about them, maybe I'll make that my follow up recipe. For now, enjoy a healthy, basic bowl of chili!
Ingredients
-1 tbsp avocado or olive oil
-1/2 onion chopped
-1 jalepeño or other diced pepper
-1 lb 99% lean turkey or chicken
-1/2 package chili seasoning
-2 cans beans (red, kidney, pinto, or mix/match)
-28 oz crushed tomatoes
-1 can rotel
Directions
1. Drizzle oil in pot on medium heat. Add onions with peppers and saute for 5 minutes.
2. Add meat and wait until browned, then add chili seasoning.
3. Once meat is fully cooked, add beans, tomatoes, and rotel.
4. Let all ingredients simmer for about 30 minutes.
5. Garnish with your favorite toppings and enjoy!
