Homemade Pasta Sauce

This pasta sauce is one of my favorite nutrient dense meals. It's literally made with all vegetables, and you'd have no idea. It's also one of the easiest dinners to prep. You simply roast all your vegetables (pictured below) and then blend them up into a sauce. Optional to add some cream + pepper flakes for a vodka'esque sauce as well. I paired it with my favorite gluten free pasta and it makes for such a warm, comforting meal.

Ingredients

-1 medium squash

-1 medium  zucchini

-1 yellow onion

-1 red pepper

-5 large carrots

-6 Roma tomatoes

-2 gloves garlic

-4 tbsp olive oil

-2 tsp oregano

-Salt and pepper to taste

-Crushed red pepper to taste

-1/4 cup heavy cream (optional)

Directions

1. Cut up all the vegetables and place on a baking sheet. Leave the garlic cloves unpeeled.

2. Bake in the oven at 425 for 40 minutes.

3. Let cool for a few minutes. Place ingredients in a blender and blend until smooth.

4. Transfer to stove top and mix in crushed red pepper and cream if desired.

5. Add pasta of choice and enjoy!
