Italian Sausage
Spaghetti Squash

Ok, I have gotten so many friends and family hooked on this recipe. My boyfriend actually said he preferred it over normal pasta so... hear me out. This Italian sausage pasta base is so incredibly simple, it looks way more complicated than it is. Bonus points for using the squash as a bowl. This has become my favorite fall/winter dish, and once you make it you'll see why. Here's what you need:

Ingredients 

For one full squash, which is 2 servings

-1 medium size spaghetti squash

-1 tbsp olive oil

-salt and pepper to taste

-3 Italian sausage links

-1.5 cups marinara

-1/4 cup creamy goat cheese

-1/2 cup Mozzarella and/or Parmesan 

-Fresh parsley to garnish

Directions

1. Cut spaghetti squash in half, length wise. Rub oil, salt, and pepper into both halves of the squash and place face down on foil lined baking sheet.

2. Cook spaghetti squash in the oven at 400 degrees for 40 minutes.

3. While the squash cooks, add the Italian sausage to a skillet on medium heat. Once the sausage starts browning, add the marinara sauce and goat cheese.

5. Once the squash has cooled, scoop spaghetti squash into hand towel and ring out excess liquid over the sink. Add squash to the sauce mixture on the skillet.

6. Cook until combined, then scoop entire mixture back into the hallowed out spaghetti squash halves and top with mozzarella and parmesan.

7. Broil the halves for 2 minutes watching it closely, or until the cheese has melted over top.

8. Garnish with fresh parsley and enjoy!
