4 Ingredient Pancakes
Is there anything better than pancakes on the weekend? Correction- is there anything better than healthy pancakes on the weekend, that don't make you feel sluggish for the rest of the day? And the thing about these pancakes, they are so easy you really don't have to wait for a weekend indulgence. I simply mix my ingredients in a blender and pour them on the stovetop. Pancakes in 5 mins? It seems too good to be true. I love adding chocolate chips are wild blueberries to mine! It reminds me of childhood, but pancakes are simply something I will never grow out of.
Ingredients
-1 banana
-1/4 cup oats
-2 eggs
-1 tsp baking soda

Optional
Chocolate chips or blueberries to garnish!
Directions
1. Butter or oil a pan on your stovetop on medium-low heat.
2. Blend banana, oats, eggs, and baking soda in a blender. Check consistency and add dashes of water if you want thinner, or more oats if you want thicker. The baking soda is what makes them "fluffy" so keep that in mind.
3. Stir in topping of choice, and pour pancakes on stovetop.
4. Cook for a few minutes until you start to see air pockets form, and flip. Cook for another couples minutes. Enjoy!
